Why Your Supermarket Needs a Food Court (2026 Case Study)

Xiaoxiang Supermarket's 5000 sqm store does 1.2M RMB/day. The secret? Open kitchens, fresh-cooked food, and localized street food.

We visited Xiaoxiang Supermarket's 5,000 sqm flagship in Ningbo, China. After the opening hype died down, the store still does RMB 700,000+ on weekdays and 1.2M+ on weekends — purely offline, no delivery orders counted. The first month likely cleared RMB 30 million.

What's drawing the crowds? It's not lower prices. It's the food.

What Xiaoxiang Did Differently

1. Open kitchen = theater

The store built a central "Chef's Kitchen" where roasted chicken, pizza, and burgers are made in full view. Customers smell the food before they see the shelves. There's even a dedicated dining area with tables, water fountains, and handwashing stations — because people will stay and eat.

2. Localized street food corner

Instead of a generic "international food" section, they partnered with local Ningbo brands: fresh tangyuan (glutinous rice balls) made on-site, local yellow croaker and pomfret from Zhoushan fishing ports, and traditional local preserved seafood. This isn't a chain store — it feels like a local food market.

3. Fresh-craft beer on tap

A 9.9-RMB craft beer station with 12 rotating taps. The margin on a cup of self-pour draft beer is enormous. It's the kind of thing that makes customers linger — and buy more groceries while they're there.

4. "We'll cook it for you" service

Buy a whole fish? They'll clean, scale, and fillet it. Buy meat? They'll chop it or grind it. Buy fruit? They'll peel and cut it. Solving the "I bought this but I don't know how to prepare it" problem is why people come back.

The Deeper Shift: Supermarkets Are Becoming Food Destinations

The data is clear. The supermarkets winning in 2026 aren't winning on price or selection — they're winning on being a place you want to spend time in.

  • Hema Fresh built its brand around in-store fresh food
  • Sam's Club's $5 rotisserie chicken drives 20% of foot traffic
  • Xiaoxiang is betting the same formula at a lower price point

Why? Because the grocery shopping trip is dying. People order packaged goods online. The only reason to visit a physical supermarket is fresh food you can't get delivered well — roasted chicken, fresh fish, local specialties, and an experience.

What This Means for Your Store

If you're opening or renovating a supermarket, budget for a food/experience zone, not just shelving:

  • Allocate 15–25% of floor space to fresh-prepared food, bakery, or a food hall
  • Partner with local food producers — don't try to do everything yourself
  • Add small "experience" anchors (fresh juice bar, craft beer on tap, roasted nut station)
  • Design the seating area — if people eat there, they shop longer

At ChinaRetailDesign, we plan these food zones as part of the store layout — and source the commercial kitchen equipment, bakery ovens, and juice bars from the same Chinese factories that supply Hema and Xiaoxiang.

Key Takeaway: The modern supermarket isn't a place to buy canned goods. It's a food destination. The stores that add open kitchens, fresh-cooked food, and local street food will win. The ones that just sell packaged products will disappear.
